The Finch Bay's open-air restaurant is a real gem, offering a menu of sustainably-sourced seafood infused with local ingredients. Served at your own pace and just as you like it, enjoy delicacies like the slipper lobster, white fish stew, and duck a l'orange in a Galapagos bitter orange sauce. Grab a signature cocktail at the poolside bar, where you can while away the hours on a sun lounger or head to the spa - a few steps from the beach, it offers everything from chocolate masks to volcanic stone treatments.
The work of top Ecuadorian designer, Julio Vinueza, each room is tropical and fun, with voluminous beds, nautical rugs and photographs of laid-back ocean scenes. Set slightly further back from the beach, there are 21 rooms in total, all with a shared balcony (and hammocks, of course). The six suites are slightly elevated and enjoy expansive sea views from a private patio. The furnishings are simple and elegant, while the bathrooms feature a glass-encased shower, pristine facilities and organic toiletries.
In the Galapagos, it's possible to see something new every day. From the Finch Bay, cycle or hike along the trails of Isla Santa Cruz and visit the giant tortoises in the Highlands; kayak along the coast and spot sea lion pups on the beach; or go on epic dives. For longer adventures, hop aboard the hotel's yacht for a day of exploring, and look for the members of the 'Galapagos 15', explore the white sands of Tortuga Bay, and visit the Charles Darwin Research Station.
