



Behind its rosy shell, you'll find exposed brick walls, lavish sofas, and hallways lit with crystal chandeliers. On the third floor, the restaurant enjoys sweeping views across Cuenca through wall-to-wall windows or from the scenic balcony. Sitting under the glow of bohemian lamps, you'll tuck into a menu of gourmet dishes inspired by the provinces of Ecuador and their traditions. Decorated with mustard, floral seats and polished wooden tables, the bar offers signature cocktails - they're especially good at sunset.
The rooms have retained Cuenca's traditional bahreque walls, now splashed with original artwork and intricate headboards to support the pillow-top mattresses developed exclusively for the hotel. The bathrooms are contemporary and polished and feature marble countertops, walk-in rainfall showers and heavenly AromaVida toiletries. The Luxury Suite is the grandest and features a jacuzzi and private balcony with views of the Tomebamba River. Oh, and minibars all come filled with high-altitude Ecuadorian coffee and a range of herbal teas.
Wander down cobblestone lanes of Cuenca, taking in the authentic architecture, perusing vibrant markets and stopping for some hot pan cuencano when you're peckish. The main attraction is the cathedral, which offers a stellar view from its tower, and the Rio Tomebamba - a bicycle ride is definitely on the cards. About 40 minutes outside of town, El Cajas National Park is fantastic for hiking and you'll walk alongside llamas, colourful hummingbirds and, if you're lucky, spectacled bears (made famous by Paddington!).
