Nicaragua sets a high bar from the off. Granada – all saffron-painted churches and cobblestone plazas draped along Lake Nicaragua – is the obvious starting point, but save some energy for Masaya Volcano, where peering into the lava lake of "La Boca del Infierno" at dusk, with bats wheeling overhead by the thousand, is about as dramatic as travel gets. In León, Central America's largest cathedral shares the skyline with revolutionary murals, and the ink-black slopes of Cerro Negro await anyone with a peculiar urge to hurtle down a live volcano on a plank of wood. Inland, twin-peaked Ometepe rises from the lake's silver surface – wrapped in rainforest, ringing with howler monkeys, and scattered with ancient petroglyphs – before the country empties out entirely on car-free Little Corn Island, where the reef is pristine, the pace is Caribbean slow , and the only real decision is whether to snorkel first or eat the just-caught snapper. Wash it all down with a measure of Flor de Caña – rated among the world's finest rums – and a plate of vigorón.
