Gaston d'Orléans ordered this hospice built on the Loire's left bank, facing the royal château he was busy remodelling across the water. Christophe Hay, born up the road in Vendôme and trained at the hotel school in Blois itself, sold the restaurant that made his name in order to take the place on. It opened after a long restoration and his kitchen now holds two stars and a green one. Grounds run down towards the river: greenhouses, a permaculture potager, fifty-odd heirloom asparagus varieties. He keeps his own wagyu herd, too. Dinner is very much the draw, and everybody here knows it.

Colours come off the water itself, sandbank whites and mineral greys, powder blue and ochre set against old beams and brass. A Sisley spa fills 450 square metres with five cabins and a fifteen-metre pool under the vaults, and a second pool lies outside facing the Loire. Amour Blanc, the easier of the two restaurants, hangs a beef maturation room off its dining room. A pâtisserie counter works the ground floor and sells homemade vinegars and honey.
Ground-floor bedrooms open straight onto private terraces and the gardens, while upper floors look over the water to the château and the cathedral, which is the view you came for and worth the difference. Categories climb from superiors through deluxe and triples to junior suites, and one set over two levels. Interiors are contemporary throughout, so anyone hoping for antiques and canopied beds should adjust expectations.
Over the bridge, the Château Royal de Blois gives you four wings from four different centuries, including the open spiral staircase built so the court could watch the king climb it. Chambord and Cheverny lie twenty minutes out, Chaumont holds its garden festival from spring onwards, and the Loire à Vélo passes the gate. Flat-bottomed boats still work the sandbanks. Garden tours and cookery sessions happen when you ask in advance, and the kitchen garden earns an hour on its own.
